Ingredients
Layer 1: Refried Eggplant
- 1 Small Eggplant, diced
- 1 Red Onion, diced
- 2 tbsp Coconut Oil
- 1 Roma Tomato, diced
- 2 tsp Noble Made Chili Seasoning
- 1/4 cup Bone Broth
- 1 clove minced garlic
Layer 2: Cashew Crema
- 1 1/2 cups Cashews, soaked
- 3 tbsp Noble Made Nutritional Yeast
- 1 tbsp Olive Oil
- 1/4 cup Warm Water
- Salt & Pepper to taste
Layer 3: Guacamole
- 2 Avocados
- 1 Lime, juiced
- Salt & Pepper to taste
Layer. 4: Sour Cream
- 3/4 cup Mayonnaise
- 2 tsp Lemon Juice, fresh
- 1/3 tsp Apple Cider Vinegar
- Pinch of Salt
Layer 5: Pico de Gallo
- 1 cup Tomato, chopped
- 1 Lime, juiced
- 1/4 cup Onion, chopped
- 1/8 cup Cilantro, chopped
Layer 6: Bell Pepper
- 2 Bell Peppers, chopped (pick your favorite color!)
Layer 7: Olives
- 1/4 cup Black Olives, chopped
Garnish: Cilantro, Noble Made Chili Seasoning
Instructions
Layer 1: Refried Eggplant
- Melt the coconut oil over medium-high heat. Add the onion and stir for about a minute. Add the tomato. Once softened, add the cubed eggplant. As the mixture dries, add the bone broth.
- Transfer to a blender, add the minced garlic and Noble Made Chili Seasoning and puree.
- Add the mixture to an oiled pan and cook for 3-5 minutes to refry.
Layer 2: Cashew Crema
- Add cashews, Noble Made Nutritional Yeast, olive oil, warm water, salt and pepper to a food processor and blend until smooth.
- In a cast iron pan, add refried eggplant, and cover it with a layer of cashew crema. Bake in a 400°F oven for 10 minutes.
Layer 3: Guacamole
- Mash avocados and mix in lime juice, salt and pepper. Lay over the cashew crema.
Layer 4: Sour Crema
- Combine mayonnaise, lemon juice, apple cider vinegar and salt. Add almond milk to thin as you prefer. Lay over the guacamole.
Layer 5: Pico de Gallo
- Combine chopped tomato, lime juice, chopped cilantro and chopped onion, and sprinkle over sour crema.
Layer 6 & 7: Diced Bell Pepper
- Sprinkle bell pepper, olives, extra cilantro & chili seasoning, grab a chip and fresh veggies and dip away!
